Gluten Free Strawberry
Shortcake
A
yummy treat for breakfast or dessert.
INGREDIENTS

Strawberries
20-30.

3
handfulls of your favorite nuts (I am thinking almonds and cashews).

hand full dates (without pits).

dashes salt.

1
T coconut oil.

T raw honey/maple syrup or agave syrup mint leaves.

cream or whipped cream (optional). Raw if possible.

Grind nuts in Vitamix or coffee grinder.

Put
nut meal, dates, one dash of salt, coconut oil and 1T honey in food
processor and process till 'doughy'. Put
in bowl.

Put
half of strawberries in food processor and chop. Pour over 'dough'.

In
blender mix rest of strawberries, dash of salt and 1T honey together
until smooth. Pour on top of 'dough' and strawberries. Add some
chopped mint leaves (optional). Enjoy with (whipped) cream!
NOTES:
The nuts should be soaked overnight in water to give time for the
antinutrients to be removed. They should then be dehydrated at a low
temp so as not to denature the enzymes and proteins. Abby
